Fruit Salsa

My friend Kim brought this to our house on Memorial Day and I absolutely loved it. When I asked her for the recipe, she pointed me to Annie’s Fruit Salad on allrecipes.com… noting that she made all kinds of substitutions.

The original recipe suggests you make homemade cinnamon tortilla chips to go along with it – but given that Stacy’s Pita Chips makes a cinnamon/sugar variety, I’ve never bothered to make the tortilla chips. 

Here’s the recipe from allrecipes.com > with my notes to the right:

  • 2 kiwis, peeled and diced
  • 2 Golden Delicious apples – peeled, cored and diced > any kind of apple would work
  • 8 ounces raspberries
  • 1 pound strawberries
  • 2 tablespoons white sugar > I brought this down to about 1-2 tsps
  • 1 tablespoon brown sugar > I skipped this
  • 3 tablespoons fruit preserves, any flavor > I used strawberry, about 2 TBSP
  • I had a bunch of blueberries around so I threw them in there too
