I debated about whether this belongs in the “mains” or the “sides” category… it could be either. I think this is one of those recipes that is even better on the 2nd day. You can serve it cold, at room temperature, or warm.
- 1/4 cup pine nuts
- 1 cup quinoa
- 2 cups water
- sea salt to taste
- 1/4 cup fresh lemon juice (or fresh orange juice… or fresh lime juice… or a combination of)
- 2 stalks celery, chopped
- 1/4 red onion, chopped
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon ground cumin
- 1 bunch fresh parsley, chopped
Toast the pine nuts. (4-5m in a small skillet over medium heat) Set aside to cool.
Combine the quinoa, water and salt. Bring to a boil, then reduce heat to medium and cook until quinoa is tender and the water has been absorbed (approx 10 minutes). Remove from the hot pan. Cool for 1-2 minutes, then fluff with a fork.
Meanwhile… stir all the other ingredients together (pine nuts, citrus juice, veggies, herbs, spices).
Transfer the quinoa to a serving bowl and mix with the nuts, veggies, spices. Adjust salt and pepper if needed before serving.
