Chicken Salad – Hold the Mayo

3 cups diced/shredded cold, grilled chicken
1 cup diced apple
1/2 cup diced celery
1/2-1 cup red or black seedless grapes
2 green or red onions, chopped
1/2 cup chopped toasted walnuts
3 TBSP balsamic vinegar
4 TBSP olive oil
1 TBSP honey
salt and pepper to taste

Toss together the chicken, apple, celery, grapes, onion and walnuts.

Whisk together the vinegar, honey and oil. Pour 3/4 of the dressing over the salad. Mix well. Add additional dressing to taste. Season with salt and pepper to taste and mix well. Let rest 10 to 15 minutes, keep chilled.
