Honey Crisped Walnuts

This is a super simple recipe – taken from “The Flexitarian Table” by Peter Berley.  These walnuts are a great addition to salads, roasted vegetables, soups….

1 tsp unsalted butter
1 c coarsely chopped walnuts
3 tablespoons honey
1-2 tsp sea salt

Preheat the oven to 350 F.  Use the butter to grease the bottom of a small baking dish.  Toss the walnuts into the dish and drizzle evenly with the honey.  Roast for 15 minutes, stirring every 5 minutes.

Scrape the walnuts onto a plate, season with the salt and allow to cool.

You might want to make a few batches of these at a time as they will keep in an airtight container in the freezer for up to 3 months.
