Sauteed Greens

This is a pretty straightforward recipe… so straightforward that it probably doens’t even deserve to be called a recipe.  I put it out here on this site just as a reminder that I need to cook more stuff like this. 

  • 2-3 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1/2 small red onion, diced
  • 1 bunch greens (swiss chard, spinach, kale are good choices)
  • 1/2 cup dry white wine
  • 1 tablespoon fresh lemon juice, or to taste
  • 2 tablespoons freshly grated Parmesan cheese
  • salt to taste (optional)

Heat olive oil together in a large skillet over medium-high heat. Stir in the garlic and onion, and cook for 30 seconds until fragrant. Add the greens and the white wine. Simmer until the greens begin to soften and the color is vibrant, about 2-4 minutes.  Finally, stir in lemon juice and Parmesan cheese; season to taste with salt if needed.
